Violation of Code: [511-6-1.04(6)(f)] Observed multiple foods on buffet steam table and warmer cabinet hot holding at temperatures below 135 degrees Fahrenheit [see log]. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F (57°C) or above. COS: PIC reheated to a temperature of 165 degrees Fahrenheit and held at hot temperatures in compliance. PIC also turned up temperatures on equipment. Corrected On-Site. New Violation. 11A Violation of Code: [511-6-1.04(6)(e)] Observed pork sausage, prepped fish, sliced tomatoes and white gravy all in cooling process fully covered with lids and saran wrap preventing adequate air to aid in cooling. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; (ii) Separating the food into smaller or thinner portions; (iii) Using rapid cooling equipment;(iv) Stirring the food in a container placed in an ice water bath;(v) Using containers that facilitate heat transfer;(vi) Adding ice as an ingredient; Pf or(vii) Other effective methods. 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. New Violation. 17B Violation of Code: [511-6-1.06(5)(n)] Observed outside receptacle dumpster lids open. Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered. COS: PIC closed lids. Corrected On-Site. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed large build-ups of ice through out walk-in freezer. All physical facilities shall be maintained in good repair. Corrected On-Site. New Violation. 17D Violation of Code: [511-6-1.07(5)(d)] Observed an accumulation of dust on both the men's and women's restroom ventilation systems. Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials. Facility must correct violation within (10) days time.
