Violation of Code: [511-6-1.04(3)(a)] During receiving from Galindo Produce; Observed raw, shelled eggs with an ambient temperature of 62 degrees Fahrenheit and an actual temperature of 48 degrees Fahrenheit. Inspector observed truck to be unrefrigerated and for produce. Raw eggs shall be received in refrigerated equipment that maintains an ambient air temperature of 45°F (7°C) or less. COS: Inspector intervened and encouraged manager to reject shipment of raw, shelled eggs. Corrected On-Site. New Violation. 11A Violation of Code: [511-6-1.04(6)(e)] Observed pans of refried beans and chorizo being cooled in an ice bath with metal lids fully covering food. Observed breaded jalapeno and cheese fully covered with saran wrap while in cooling process. Observed refried beans in walk in cooler being cooled in a walk in cooler speed rack with metal lids, fully covering food. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:(i) Placing the food in shallow pans;(ii) Separating the food into smaller or thinner portions;(iii) Using rapid cooling equipment;(iv) Stirring the food in a container placed in an ice water bath;(v) Using containers that facilitate heat transfer;(vi) Adding ice as an ingredient; Pf or (vii) Other effective methods. 2. When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be:(i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Manager uncovered food during inspection to ensure adequate cooling. Corrected On-Site. New Violation.
