Violation of Code: [511-6-1.05(7)(a)1] Observed an accumulation of mold and debris along the interior surfaces of facilities' functioning ice machine. Equipment of food contact surfaces shall be clean to sight and touch. Facility to properly clean and drain ice machine at COB. New Violation. Correct By: 09/01/2022 11A Violation of Code: [511-6-1.04(6)(e)] Observed Pico de Gallo at 73F and cooked noodles at 81F on a food cart with no method to ensure proper cooling. Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled:(i) Placing the food in shallow pans;(ii) Separating the food into smaller or thinner portions;(iii) Using rapid cooling equipment;(iv) Stirring the food in a container placed in an ice water bath;(v) Using containers that facilitate heat transfer;(vi) Adding ice as an ingredient; or (vii) Other effective methods. COS: Inspector was able to identify that food was still in cooling process per PIC and educated staff on proper cooling methods. PIC placed noodles in walk in freezer and Pico de Gallo in an ice bath to reach proper temperature within 4 hours. Corrected On-Site. New Violation.
