New Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Observed egg drop soup located in a steam table with temperatures ranging from 128-133F. Time/Temperature Control for Safety Food, Hot Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F or above. COS: PIC turned up steam table and stirred egg drop soup to bring temperature above 165F. Corrected On-Site. New Violation.
