Violation of Code: [511-6-1.05(6)(n)] The Dish washing machine was Observed registering 0ppm of chlorine with a chemical test kit.
Note:The dishmachine had run out of chlorine sanitizer.
An Chlorine solution shall have a minimum temperature of 68°F (20°C)
P minimum concentration
between 50.00 ppm and 100.0 ppm, P
and pH of 5.0 or less or a pH no higher than the level for which the
manufacturer specifies for the solution to be effective.
Note: Employee will manually wash, rinse and sanitize all equipment at the three compartment sink. New Violation.
10D Violation of Code: [511-6-1.04(8)(b)] 1. Cottage Cheese was observed in the reach in cooler with a sell by expiration date of 4/30/2022.
2. Mozzarella Cheese was observed in the reach in cooler with a sell by expiration date of 6/11/22.
3. Genoa Salami was observed in the reach in cooler with a sell by expiration date of February 28, 2022.
(b) Expired Foods. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and
time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or
service to the consumer or used as an ingredient in other foods shall be immediately discarded and
shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date.
Note: An employee voluntarily discarded all expired food during the inspection. Corrected On-Site. New Violation.
17C Violation of Code: [511-6-1.07(5)(a),(b)] A foul odor of sewage was observed in the facility.
