Violation of Code: [511-6-1.05(7)(a)1] An Employee was observed at the (3) compartment sink wahing kitchen utensils with soap and then rinsing them with water without sanitizing them.
(a) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils.
1. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf.
2. The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease
deposits and other soil accumulations.
3. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food
residue, and other debris.
Note: The Health Inspection demonstrated the right way to wash, rinse and sanitize equipment at the three part sink. The employee then proceeded to wash, rinse and sanitize the equipment in 50ppm of chlorine sanitizer during the inspection. New Violation. Corrected On-Site. New Violation.
6-2 Violation of Code: [511-6-1.04(6)(g)] Cooked beans was observed cold holding in the reach in cooler for more than (24) hours with no date label.
According to the Manager the beans were cooked yesterday, the manager immediately placed a date label on the beans during the inspection. New Violation.
13A Violation of Code: [511-6-1.02(1)(d)] The manager placed the most recent inspection on the wall during the inspection. Corrected On-Site. New Violation.
