6-2 Violation of Code: [511-6-1.04(6)(g)] Observed containers of previously cooked General Tso chicken inside the facility's walk-in cooler without any indication of the prepared date; further investigation revealed that an employee prepared the items in question on Monday (12/06); Time/temperature control for safety food that has been prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the day the food shall be consumed, sold, or discarded. Food can be held at 41 or lower for a maximum of 7 days and the day the food is prepared shall be considered day 1. consulted with PIC on ensuring the required date marking was applied to all items held in the establishment for over twenty-four hours; PIC complied with the required guidelines.
