Violation of Code: [511-6-1.05(6)(l)] Observed ware-washing machine to not reach the required wash temperature of 150F and rinse temp of 180F. The temperatures on the ware-wash plate for wash is 150F and rinse is 180F. In a mechanical operation, the temperature of the hot water sanitizing rinse as it enters the manifold may not be more than 194ºF (90ºC), or less than:
(i) For a stationary rack, single temperature machine, 165ºF (74ºC); or
(ii) For all other machines, 180ºF (82ºC). PIC to correct violation in 3 days time. New Violation. Correct By: 12/10/2021
16A Violation of Code: [511-6-1.06(1)(g),(h)] Observed a employee hand wash sink at a temperature of 62F. Employee hand sink water must be > 100 degrees Fahrenheit. Hot water generation and distribution systems shall be sufficient to meet peak hot water demands of the food service establishment. PIC blocked off sink so no one would use it until the violation is corrected. Repeat Violation.
