4-2B Violation of Code: [511-6-1.05(7)(b)] Observed an ice machine with a build up of debris and a accumulation of pink and black mold. Food contact surfaces as well as nonfood contact surfaces should be cleaned and sanitized at a frequency to prevent mold accumulations and build up. COS: PIC is to close ice machine and is to clean and sanitize before further use. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Observed a low temperature sanitizing dish machine with a final rinse of 122F however there was no chlorine sanitizer reading after the final rinse. Low temperature sanitizing dish machines should have a final rinse of 120F and have a chlorine reading or be based on manufacturing recommendations. COS: PIC is to use other dish machine until bar dish machine has a sanitizer reading. Corrected On-Site. New Violation.
