Violation of Code: [511-6-1.04(6)(i)] Observed cooked chicken wings being held at room temperature using Time as a Public Health Control. PIC stated those were the same wings that were held for TPHC the day prior and were cooled to be reused for TPHC today. TCS food being held using TPHC must be labeled or a log must be kept of the time they were taken out of temperature control and their temperature at that time and be discarded after the time is up. These items can not be cooled and reheated and placed under temperature control after being labeled for TPHC. COS: PIC discarded the chicken wings. Corrected On-Site. New Violation.
