Violation of Code: [511-6-1.04(5)(h)] Observed Nacho cheese was observed in an oven it had been there for 4 hours or more it was supposed to have been reheated and hot held but it was forgotten in the oven.
Reheating for hot holding shall be done rapidly and the time the food is between the temperatures of
41°F (5°C) and 165°F (74°C) and 41°F (5°C) and 135°F (57°C) for commercially processed food, may not
exceed 2 hours.
Note: Manager discarded the Nacho cheese immediately during the inspection. New Violation. Corrected On-Site. New Violation.
