6-1B Violation of Code: [511-6-1.04(6)(f)] Observed cheese being hot held at 129F. TCS food should be hot held at 135F and higher to prevent bacterial growth.
COS: Cheese was placed on the stove top and reheated to 165F within 2 hours for 15secs. Corrected On-Site. New Violation.
