Violation of Code: [511-6-1.04(6)(f)] Observed taco salad and apple pecan salad cold holding in front food service reach-in cooler and drive through reach-in cooler at 45 degrees Fahrenheit and 47 degrees Fahrenheit respectively. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC voluntarily discarded the salads during the inspection. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(h)] Observed cooked sausage and egg mix cold holding in the walk-in cooler with a discard date of 5/2/21, a prepared date of 4/28/21, and a thaw date of 4/29/21. A food that requires date marking shall be discarded if it: Exceeds 7 days, not including the time that the product is frozen; Is in a container or package that does not bear a date or day; or Is appropriately marked with a date or day that exceeds 7 days. COS: PIC voluntarily discarded sausage and egg mix during the inspection. Corrected On-Site. New Violation. 11D Violation of Code: [511-6-1.05(2)(x)] Observed temperature measuring device to be absent in cold holding unit(s). In a mechanically refrigerated or hot food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot food storage unit. Cold or hot holding equipment used for time/temperature control for safety food shall be designed to include and shall be equipped with at least one temperature measuring device that is located to allow easy viewing of the device's temperature display. PIC to equip all cold holding units with working temperature measuring devices. To be corrected within 10 days. New Violation. Correct By: 05/21/2021 17B Violation of Code: [511-6-1.06(5)(f)] Observed missing drain plug and accumulation of food debris and other trash accumulated. Receptacles and waste handling units for refuse and recyclables such as an on-site compactor shall be installed so that accumulation of debris and insect and rodent attraction and harborage are minimized and effective cleaning is facilitated around and, if the unit is not installed flush with the base pad, under the unit. PIC to have drain plug installed and refuse area cleaned. To be corrected within 10 days. New Violation. Correct By: 05/21/2021
