Violation of Code: [511-6-1.03(2)(a)-(l)(n)(o)] PIC failed in her duties to provide active managerial control in monitoring hand washing, cold holding and date marking of TCS foods. PIC was trained during the inspection to monitor hand washing, cold holding and date marking of TCS FOODS. New Violation. Corrected On-Site. New Violation. 2-1B Violation of Code: [511-6-1.03(5)(c)] Observed an employee with gloves on pick up an item off of the floor to discard in the trash and failed to change gloves and wash their hands after completing the task, then proceeded to take a customer's order. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles and before donning gloves to initiate a task that involves working with food. COS: Employee was instructed to wash hands and change gloves. New violation. Corrected On-Site. New Violation. 3-1C Violation of Code: [511-6-1.04(1)] Observed (3) dented food cans in the dry storage area. There was no designated area for dented cans. Food shall be safe, unadulterated, and honestly presented. COS: PIC Voluntarily discarded dented cans during the inspection. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed (2) containers of barbecue pulled pork cold holding at 46 and 47 degrees Fahrenheit inside the walk in cooler unit. Except during cooking or cooling or when time is used as the public health control, time / temperature control for safety food shall be maintained at 41 Degrees Fahrenheit or below or 135 Degrees Fahrenheit or above. PIC voluntarily discarded the barbecue pulled pork during the inspection. New Violation. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed fat free butter milk and scrambled egg mix to be opened and half way used with no "opened" or "discard" date. Ready to eat Time/temperature control for safety foods shall be clearly labeled with a maximum discard date of 7 days after the original container is opened. COS: PIC voluntarily labeled egg mix and butter milk with clear, proper dating. Corrected On-Site. New Violation. 12B Violation of Code: [511-6-1.03(5)(g)] Observed (2) employees wearing wrist jewelry while cooking and preparing food. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. 3 Compartment sink must be 110 degrees Fahrenheit or greater.
