Violation of Code: [511-6-1.05(7)(b)] Observed accumulated slime on the interior surface of the multi use slicer when it was broken down by the Manager at the request of the Health Inspector. Equipment food - contact surfaces and utensils shall be clean to sight and touch. Note: The manager placed the multi use slicer into the dish machine and it was washed ,rinsed and sanitized during the inspection. New Violation. Corrected On-Site. New Violation. 4-2B Violation of Code: [511-6-1.05(6)(n)] Observed Dish Machine not registering any chlorine sanitizer solution when tested with a chemical test kit. Chemical sanitizing dish machines must dispense sanitizing solution with concentrations between 50-100ppm for Chlorine sanitizers according to the Manufacturer's recommendation. New Violation. COS: PIC Removed the cups from the dish machine and they were washed, rinsed and sanitized at the (3) compartment sink in the kitchen during the inspection. New Violation. PIC will contact Ecolab to come and repair the dish machine. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed various TCS food items cold holding at the front cook line area of the kitchen at temperatures above 41 Degrees Fahrenheit. Except during preparation. cooking or cooling , or when time is used as the public health control, time / temperature control for safety food shall be maintained at 41 Degrees Fahrenheit or below or 135 Degrees Fahrenheit or above. Note: All the TCS FOOD items that were observed to be less than 41 degrees Fahrenheit were all voluntarily discarded during the inspection. New Violation. COS. Corrected On-Site. New Violation. 16A Violation of Code: [511-6-1.06(1)(g),(h)] Observed hot water temperatures in male and female rest rooms at 93 Degrees Fahrenheit and 94 Degrees Fahrenheit. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishments. New Violation.
