Violation of Code: [511-6-1.04(8)(b)] Observed ham with a sell-by date of 3/26/21 and turkey with sell-by dates of 3/23/21 and 3/26/21 cold holding in the reach-in cooler beneath the prep-top in the main kitchen. Prepackaged time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: PIC voluntarily discarded the ham and turkey during the inspection. Corrected On-Site. New Violation. Violation of Code: [511-6-1.05(3)(h),(i)] Observed facility to have quaternary ammonium sanitizing solution and no method of testing the concentration. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. COS: Inspector provided PIC with several test strips. PIC to purchase and maintain a supply of test strips. Corrected On-Site. New Violation.
