Violation of Code: [511-6-1.05(6)(n)] Observed a high temperature sanitizing dish machine with a final rinse of 122F. After running the machine 3-4 times, the final rinse temp. stayed at 122F. Hot water sanitizing dish machine should have a final rinse of 165F-180F to ensure dishes and utensils are being sanitized. COS: PIC agreed to use 3-compartment sink to wash, rinse, and sanitizine. Corrected On-Site. New Violation.
