Inpection Notes

Violation of Code: [511-6-1.04(6)(d)] Observed hash brown bakes tightly wrapped in saran wrap and sausages in an enclosed container with condensation on the lid at temperatures of 45 degrees Fahrenheit and 47 degrees Fahrenheit respectively at 1:20PM 3/25. Both food items were heated to 165 degrees Fahrenheit or above at approximately 6:30pm 3/24. The items were cooled at room temperature and then wrapped or placed in a container and placed in the reach in cooler to continue cooling at approximately 8pm. Cooked time/temperature for safety food shall be cooled: Within 2 hours from 135 degrees Fahrenheit to 70 degrees Fahrenheit and within a total of 6 hours from 135 degrees Fahrenheit to 41 degrees Fahrenheit or less. COS: PIC voluntarily discarded the sausage and hash brown bakes. Inspector discussed cooling with PIC and provided PIC with a cooling log to monitor cooling of foods. Corrected On-Site. New Violation.
