Violation of Code: [511-6-1.04(6)(i)] Observed time as a public health control being used for meatballs, chicken, and soup without documentation of the discard time. Items removed from hot holding shall have an initial temperature of 135 degrees Fahrenheit or greater when removed from hot holding and shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when food is removed from temperature control. COS Food items that were recently pulled out by the PIC were marked with the discard time as they were still within temperature of 135 degrees Fahrenheit or above. Food items that were pulled out previously and unmarked were discarded. Corrected On-Site. New Violation.
