Violation of Code: [511-6-1.04(6)(f)] Observed sliced cheese, sliced tomatoes and cut lettuce cold holding in prep top cooler at temperatures of 55 degrees Fahrenheit, 58 degrees Fahrenheit, and 65 degrees Fahrenheit respectively. Observed Ham and chili cold holding in a reach in cooler under the prep top at temperatures of 50 degrees Fahrenheit and 50 degrees Fahrenheit. Time/temperature control for safety foods shall be held at a temperature of 41 degrees Fahrenheit or below. COS: PIC voluntarily discarded sliced cheese, sliced tomatoes, cut lettuce, Ham, and chili during the inspection. Recommend turning units down and/or using ice baths. CFSM arrived and states prep top is on time. Corrected On-Site. New Violation. Violation of Code: [511-6-1.05(4)(b)] Observed rear hand sink and hand sink next to chicken breading station both unsealed from wall. Fixed equipment must be sealed to adjoining equipment or walls if the equipment is exposed to spillage or seepage. PIC to have sink resealed to wall. Repeat Violation. Correct By: 02/22/2021
