Violation of Code: [511-6-1.04(6)(f)] Observed steak hot holding in pan next to grill at 94 degrees Fahrenheit. Observed beans hot holding in hot box at 125 degrees Fahrenheit. Time/temperature control for safety food shall be maintained at 135 degrees Fahrenheit or above. COS PIC immediately voluntarily discarded steak during the inspection. Beans were out of temperature less than 30 minutes, therefore they were placed on the stove to reheat to 165 degrees Fahrenheit for 15 seconds. Observed beans 20 minutes later at 182 degrees Fahrenheit. Corrected On-Site. New Violation. Violation of Code: [511-6-1.04(6)(g)] Observed made-in-house hot sauce, cooked spinach, and cut lettuce cold holding in walk in cooler without date marks. Refrigerated ready to eat, time/temperature control for safety food held for more than 24h shall be clearly marked to indicate the date or day by which food shall be consumed, sold or discarded. COS PIC marked all foods with appropriate dates. Corrected On-Site. New Violation. Violation of Code: [511-6-1.06(2)(r)] Observed multiple hand sinks leaking. Observed dishwasher leaking. All plumbing should be maintained and in good repair. PIC to have sinks and dishwasher repaired within 30 days. New Violation. Correct By: 01/27/2021
