Violation of Code: [511-6-1.04(6)(f)] Observed multiple TCS foods hot holding in the buffet unit at temperatures below 135 degrees Fahrenheit. See temperature log for specific foods and temperatures. Time/temperature control for safety food shall be maintained at 135°F (57°C) or above. COS: Those food items which were cooked within 2 hours were reheated to 165 degrees Fahrenheit for 15 seconds within two hours during the inspection. New Violation. Corrected On-Site. Violation of Code: [511-6-1.07(2)(a)] Floors throughout kitchen - especially at floor/wall junctures need a deep cleaning - accumulation of grease and dirt can (and has been) and attraction for insects/rodents. Walls with build-up of grease/food throughout kitchen also need thorough cleaning. New violation. New Violation.
