Violation of Code: [511-6-1.07(6)(g)] Observed wiping clothes in sanitizing bucket with a chlorine concentration of more than 200 PPM. Ensure that the concentration of chlorine is between 50 - 100ppm. Note: The manager immediately discarded the sanitizer solution and prepared a new one that had a concentration of between 50 - 100ppm of chlorine during the inspection. New Violation. Violation of Code: [511-6-1.06(2)(d)] Observed the drainage pipe of the dish machine emptying into the open site drain without a (1) inch air gap. (d) Backflow Prevention, Air Gap. An air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch (25 mm). P New Violation.
