Violation of Code: [511-6-1.04(6)(d)] Observed cooked and cut sausage at 48F in walk-in cooler. Sausage was made on 3/3/20 and stored in a large cambro with a lid. Time/temperature Controlled for Safety foods must be cooled from 135F to 70F within 2 hours and from 135 to 41F within 6 total hours in order to prevent the potential growth of harmful bacteria. COS: PIC voluntarily discarded sausage. Observed chicken wings about to be cooled in the same manner as the sausage. Discussed with PIC a procedure in which the chicken would be store on sheet pans on a rack, allowed to cool at room temperature, then placed in walk-in cooler until they reached 41F. Once 41F the chicken would be transferred to a large cambro for storage in the walk-in cooler. New Violation. 17C Violation of Code: [511-6-1.07(5)(a),(b)] Observed multiple missing ceiling tiles and holes throughout main kitchen. The ceiling should be completely covered and sealed. PIC states work is being done to replace the ceiling tiles. Ensure floors, walls, and ceilings are all fully intact. New Violation.
