Violation of Code: [511-6-1.04(6)(f)] Observed grits hot holding in bain marie in back kitchen at 120 - 125F. Time/temperature Controlled for Safety foods must be hot held at 135F or higher to prevent the potential growth of bacteria. COS: PIC voluntarily discarded grits. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(q)1&3] Observed dish machine pressure gauge with a broken needle. The gauge appears to read approximately 20 PSI during the sanitizing rinse. The needle or entire gauge needs to be replaced. New Violation. 15A Violation of Code: [511-6-1.05(1)(a)] Observed reach-in cooler racks rusting and peeling paint. Food service equipment must be constructed of durable materials. Racks are to be replaced or painted with durable, smooth paint. New Violation.
