Violation of Code: [511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii)] Observed raw chicken stored above raw beef in reach-in cooler in main kitchen. Foods shall be protected from cross contamination by separating types of raw foods from each other such as beef, fish, lamb, pork, and poultry during storage , preparation, holding and display. COS: PIC swapped positions of chicken with beef, placing chicken on bottom of reach-in cooler. Corrected On-Site. Repeat Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed chicken and pork cold holding in prep-top cooler at 47F. Time/temperature controlled for safety foods must be cold held at 41F or lower to prevent the potential spread of harmful bacteria. COS: PIC voluntarily discarded chicken and pork. Corrected On-Site. Repeat Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Observed gaskets and surfaces of reach-in cooler and freezer with an accumulation of debris. Nonfood-contact surfaces must be kept free of accumulaitons. PIC to clean all cooler gaskets and seals. Corrected On-Site. New Violation.
