Violation of Code: [511-6-1.04(6)(f)] Observed Caesar dressing labelled keep refrigerated, nacho meat, and jalapeno ranch labelled keep refrigerated cold holding in the 4 door metal Traulsen reach-in cooler at 47, 46 and 46 degrees Fahrenheit respectively. The ambient temperature on the integrated digital thermometer within the cooler read 61 degrees Fahrenheit. The ambient temperature measured with a Thermopen and another thermometer placed inside the cooler read 47 degrees Fahrenheit. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC stated she took temperatures of foods within the cooler at approximately 7:50AM 3/12/20. PIC stated all temperatures were within the correct cold holding range with the jalapeno ranch reading 41. The nacho meat, Caesar dressing, and all items from this reach in cooler were placed in the walk in cooler and then moved to the walk in freezer. The jalepeno ranch was voluntarily discarded. By 11:30AM the nacho meat temperature registered 39 degrees Fahrenheit and the Caesar dressing registered 39 degrees Fahrenheit. The cooler is not to be used to cold hold any TCS foods until it is repaired and shown to keep an ambient temperature capable of holding TCS foods at 41 degrees Fahrenheit or below.
