Violation of Code: [511-6-1.05(6)(n)] Observed chlorine concentration of dish machine at 0ppm of chlorine. Ensure that the dish machine's final rise cycle maintains a chlorine concentration of between 50 - 100ppm. Note PIC called the company and a technician arrived during the inspection and was able to repair the dish machine and it eventually was able to dispense chlorine at a concentration of between 50 - 100ppm of. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed in -use scoops for rice stored in container of standing water at a temperature of 62 Degrees Fahrenheit. Ensure that in -use utensils are stored in standing water that maintains a temperature of 135 Degrees Fahrenheit or above. PIC removed the scoops from the water and decided to store them in clean containers and sanitize them every 4 hours. New Violation. Corrected On-Site.
