Violation of Code: [511-6-1.04(6)(f)] Observed salmon, corned beef, and raw in shell eggs cold holding in reach in kitchen refrigerator at 47 degrees Fahrenheit, 49 degrees Fahrenheit, and 47 degrees respectively. Observed pork sausage cold holding in walk in cooler at 47 degrees Fahrenheit. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: PIC voluntarily discarded sausage, eggs, corned beef, and sausage during the inspection. Corrected On-Site. New Violation. 6-1C Violation of Code: [511-6-1.04(6)(d)] Observed sausage cooling in walk in cooler at 77 degrees at 11:40 AM. PIC stated sausage was cooked this morning, 11/21/19, and placed in cooler to begin cooling at 5 AM. Cooked time/temperature control for safety food shall be cooled: (i) Within 2 hours from 135°F (57°C) to 70°F (21°C); and (ii) Within a total of 6 hours from 135°F (57°C) to 41°F (5°C) or less COS: PIC voluntarily discarded sausage during the inspection. Corrected On-Site. New Violation. 10D Violation of Code: [511-6-1.04(8)(b)] Observed two gallon jugs of Vitamin D milk with expiration dates of November 19. Prepackaged sandwiches, eggs, infant formula, shucked oysters, milk, and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: PIC isolated milk and will return to store for refund. Corrected On-Site. New Violation.
