Violation of Code: [511-6-1.03(5)(j)1&2] Observed half-eaten sandwich and individual carton of milk sitting out on food prep table. Employees shall consume food only in approved designated areas separate from food preparation and serving areas, equipment or utensil areas and food storage areas. However, drinking from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands, the container, exposed food, clean equipment, utensils and linens, unwrapped single-service and single-use articles will be allowed. New Violation. 16C Violation of Code: [511-6-1.06(4)(c)] Waste plumbing at 3 compartment sink has a direct connection in which no air gap or air break exists along the plumbing between the sink drains and sewer system (kitchen remodeled during spring 2019). A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. The facility has 30 days to either 1.) install an air gap or air break on the waste plumbing system in accordance to local plumbing code OR 2.) furnish documentation that specifies that the construction of the interceptor provides an indirect connection between the 3 compartment sink and sewer system and that the installation of the under the counter grease interceptor meets local plumbing code. The facility must contact the Health Authority 770-531-3973 once corrective action is complete. New Violation. Remarks If use of the warewashing machine is desired for the 'sanitizing only' of utensils, then the other components of the machine must also be able to operate in accordance to the manufacturer's operating instructions. This ensures that the water temperatures in the machine meet the necessary criteria for the chemical agents designed for the machine have the ability to work as intended. The facility must continue use of manual 3 compartment sink for the washing, rinsing, and sanitizing of utensils if the warewashing machine cannot operate according to manufacture's instruction.
