Violation of Code: [511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii)] Observed pans of raw meat being stored against bagged ice in outdoor ice box. Food shall be protected from cross contamination by: separating raw animal foods from ready to eat foods during storage. COS: PIC removed pans of raw meat from ice box and voluntarily discarded potentially contaminated commercially bagged ice during the inspection. Corrected On-Site. New Violation. 4-1A Violation of Code: [511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii)] Observed raw shelled eggs stored beside heads of lettuce and cooked ready to eat chicken wings stored beside box of raw chicken breasts in walk in cooler. Food shall be protected from cross contamination by storing ready to eat foods either above or spatially separated from raw animal foods during storage, preparation, holding, and display. COS- PIC rearranged foods in walk in cooler where ready to eat foods are above raw animal foods and raw animal foods are stored in ascending order of highest to lowest required internal cook temperature. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed various containers of foods in walk in cooler (refried beans, chicken wings, salsa verde, red salsa, sliced tomatoes, and chopped lettuce) where PIC reported items were made previous day(s). Prepared ready to eat foods kept over 24 hours shall be date marked to ensure foods are served or discarded within 7 days of the original date of preparation. COS- PIC able to determine original days of preparation of foods and retro-dated date labels accordingly. Corrected On-Site. Repeat Violation.
