Violation of Code: [511-6-1.04(8)(b)] Observed Parmesan cheese, sour cream, and eggs in walk-in cooler with expiration dates of 8/13/19, 10/9/19, and 9/21/19 respectively. Time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: PIC voluntarily discarded parmesan cheese, sour cream, and eggs during the inspection. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(6)(j)] Observed manual ware washing, 3-compartment sink, supplying water at 100 degrees Fahrenheit which is not sufficient to bring a washing solution to 110 degrees Fahrenheit. Manual warewashing solutions must be maintained at 110F. PIC to have hot water heaters repaired to provided water to kitchen fixtures at 110F. New Violation.
