Violation of Code: [511-6-1.04(4)(c)1(iv)] Observed plastic container of chips and container of spices/seasoning stored uncovered on bottom shelf of steamtable and prep table. Foods must be properly covered when stored to prevent possible contamination. COS- PIC had employee secure lids onto containers of chips and spices/seasonings. Corrected On-Site. Repeat Violation.
4-2B Violation of Code: [511-6-1.05(6)(n)] No sanitizer registering on test strips of sanitizing solution in sanitizing sink basin of 3 compartment sink (submerged clean utensils present). Chlorine sanitizing solution must maintain 50-100ppm to properly sanitize utensils surfaces. COS- PIC added bleach to sink until solution reached 50ppm chlorine on test strips. Corrected On-Site. New Violation.
6-1B Violation of Code: [511-6-1.04(6)(f)] Large pot of meat and vegetable soup held on stovetop at 111F. PIC reported soup was made this morning and explained soup stays on stovetop at a low heat temperature and individual portions are heated in microwave to-order. TCS foods must maintain 135F or more for hot holding. COS- PIC voluntarily discarded soup during inspection. Corrected On-Site. Repeat Violation.
