Violation of Code: [511-6-1.05(6)(n)] Observed 2 sanitizer buckets in main kitchen and 1 at bar area with 0ppm QAC sanitizer concentration. Observed spray bottle labeled sanitizer with less than 50ppm QAC sanitizer concentration. QAC sanitizer solution must be maintained at a concentration according to the manufacturer (usually 150 - 400ppm). This is to ensure food-contact surfaces are properly sanitized. COS: PIC remade sanitizer solution that measured 200ppm QAC concentration. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed sour cream and house-made blue cheese dressing at 50F. Time/temperature controlled for safety foods must be maintained at 41F to prevent the growth of harmful bacteria. COS: PIC moved spring mix bags off of top shelf to allow air flow to lower shelves. PIC discarded blue cheese dressing and sour cream. PIC to monitor reach-in cooler to ensure it maintains TCS foods at 41F or lower. Corrected On-Site. New Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Observed cooked hamburgers in water held in a pan on the flat-top grill at 111F. Observed mashed potatoes held in warmer cabinet at 83F. Time/temperature controlled for safety foods must be hot-held at 135F or higher to prevent the growth of bacteria. COS: Cook reheated the burgers to 170 (see log). PIC discarded mashed potatoes. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed commercially precooked pork that had been removed from its original packaging and portioned on 6/20/19. Refrigerated, ready-to-eat, time/temperature control for safety food prepared and packaged by a food processing plant shall be clearly marked, at the time the original container is opened in a food service establishment and if the food is held for more than 24 hours, to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days after the original container is opened. COS: Cook discarded pork. Corrected On-Site. New Violation. 15B Violation of Code: [511-6-1.05(3)(h),(i)] Establishment does not have chlorine test strips or another verifiable method to test sanitizer concentration of bar warewashing machine. Food-service must have a test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions. PIC to purchase test kit or other device to measure bar area warewashing machine chlorine sanitizer. New Violation. 17B Violation of Code: [511-6-1.06(5)(o),(p)] Observed establishment dumpster missing its drain plug. Waste receptacles with drain holes must have a plug in place to prevent potential pest and rodent harborage. PIC to have drain plug put in place. New Violation.
