Violation of Code: [511-6-1.03(5)(c)] Observed employee remove sanitized clean equipment from the clean end of the dish machine without washing hands. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils and unwrapped single - service and single-use articles and after handling soiled equipment or utensils. Note: The Health inspector told the employee to immediately drop the sanitized plates and wash her hands which see did during the inspection. New Violation. cos Corrected On-Site. New Violation. 8-2B Violation of Code: [511-6-1.07(6)(g)] Observed final rinse cycle residual chlorine concentration of the mini dish machine in the bar area registering more than 200ppm chlorine with a test strip paper. Solutions generated on site and other chemical antimicrobials applied to food contact surfaces shall meet requirements specified in 40CFR 180.940. Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (food contact surface sanitizing solutions.) Ensure the dish machine maintains a residual chlorine concentration of between 50 - 10ppm according to the manufacturer's recommendation. Note: PIC is to contact Ecolab to service the machine. New Violation. 11C Violation of Code: [511-6-1.04(6)(c)] Observed Reduced oxygen packaged salmon fish was observed still in the reduced oxygen packaged environment thawing in the walk in cooler designated for raw meat / raw seafood. Execept as specified in paragraph 4 of this subsection time / temperature control for safety food shall be thawed 1. Reduced Oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to thawing under refrigeration that maintains the food temperature at 41 Degrees Fahrenheit. PIC immediately instructed an employee to remove the fish from the reduced oxygen environment which was done during the inspection and returned to the walk in cooler. New Violation. cos.
