Violation of Code: [511-6-1.04(6)(f)] Observed chicken breast being held in warmer drawer in grill area at 111F. Time/temperature controlled for safety foods must be hot held at 135F or higher. PIC voluntarily discarded chicken breast and will educate grill employees on the need to check temperatures of hot held TCS food often. Corrected On-Site. New Violation. 15A Violation of Code: [511-6-1.05(6)(a)] Observed walk-in freezer door not closing properly. The gasket of the walk-in appears damaged. Observed ice accumulated in the space between the walk-in freezer walls and door, preventing door from closing further. PIC states a replacement door has been ordered. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Observed area around walk-in cooler with an accumulation of mold. Observed both ice cream machine reach-in coolers with accumulations of food debris along door gaskets. Non-food contact surfaces must be clean to sight and touch. PIC to clean walk-in cooler door area and both ice cream machine coolers. New Violation.
