Violation of Code: [511-6-1.05(7)(b)] Observed accumulated Debris inside the hard to reach areas of the multi use slicer. Ensure all food contact equipment are properly cleaned and sanitized, clean to touch and sight. PIC immediately placed the multiuse slicer into the (3) compartment sink and it was wash rinse and sanitized during the inspection. New Violation. cos. Corrected On-Site. New Violation. 6-1B Violation of Code: [511-6-1.04(6)(f)] Observed cooked chicken in a metal pan on the steam table in the kitchen with a temperature of 110 Degrees Fahrenheit. According to the PIC the chicken was placed on the steam table 1 hour ago. The chicken was immediately taken off the steam table and placed on the grill and was reheated to 192 Degrees Fahrenheit for 15 Seconds within 2 hours during the inspection.. New Violation. cos. Ensure the facility has metal stem thermometer calibrated in 2 Degrees Fahrenheit for monitoring cooking, holding and cooling temperatures of TCS foods in the facility. New Violation. New Violation. 16C Violation of Code: [511-6-1.06(4)(a)] Observed sewage backing up through the floor drains in the kitchen. Ensure all floor drains in the kitchen are working properly not backing up sewage onto the kitchen floor. PIC immediately ordered the employees to clean up the floor and sanitize the floor during the inspection. PIC called a technician that will be coming to examine the floor drains. New Violation.
