Violation of Code: [511-6-1.04(4)(m)] Observed wiping cloth being stored in sanitizer tray with no sanitizing solution. Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). COS: Employee filled sanitizer tray with sanitizer solution that measured 300ppm QAC. Corrected On-Site. New Violation. 14B Violation of Code: [511-6-1.05(10)(a)] Observed multiple sizes of metal pans being stacked immediately after being washed. Utensils and food contact equipment must be air dried before being stacked and stored. The drying rack provided does not meet the need for drying space given the high volume of service at this establishment. The health authority recommends more drying racks/space be installed. COS: Employee unstacked dishes to air-dry. Corrected On-Site. New Violation.
