Violation of Code: [511-6-1.04(6)(c)] Observed thawed tuna being held in reach in prep-top cooler still sealed in Reduced Oxygen Packaging. The fish is labeled "remove from package before thawing." Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment: Prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less; or prior to, or immediately upon completion of its thawing, using procedures to completely submerge in running water. COS: PIC removed the tuna from ROP packaging. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Observed microwave with a heavy accumulation of food residue and debris. According to Chapter 511-6-1.05(7)(c)2. The cavities and door seals of microwave ovens shall be cleaned at least every 24 hours by using the manufacturer's recommended cleaning procedure. Non-food contact surfaces shall be clean to sight and touch. COS: PIC cleaned inside of microwave with a sanitizer cloth. Corrected On-Site. New Violation.
