Violation of Code: [511-6-1.05(6)(o)] Observed employee washing knives at the (3) compartment sink without sanitizing them. The (3) compartment sink was not properly set up for equipment to be properly wash, rinse and sanitized. Ensure all food contact equipment are cleaned and sanitized. Cleaned to sight and touch. PIC set up the (3) compartment sink with Chlorine sanitizer solution in the 3rd compartment with a concentration of between 50 - 100ppm. The knives were then properly wash, rinse and sanitized during the inspection. New Violation. cos. Corrected On-Site.
