Violation of Code: [511-6-1.04(6)(f)] Observed raw garlic and oil mixture sitting at room temperature with no intent for TPHC. Mixing raw garlic with oil renders a potentially hazardous food which shall consequently be cold held at or below 41F in order to prevent bacterial growth. COS: PIC threw away garlic and oil mixture. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed a container of ricotta cheese in the pizza make line cooler being cold held at 52F for over 4 hours. TCS foods must be cold held at or below 41F in order to prevent bacterial growth. COS: PIC voluntarily discarded of ricotta cheese. Corrected On-Site. New Violation. 6-1A Violation of Code: [511-6-1.04(6)(f)] Observed marinara sauce left out at room temperature for over 4 hours with no intent for TPHC being used for pizza. TCS foods shall be cold held at or below 41F to prevent the growth of bacteria. COS: Employee discarded of marinara. Educated provided to PIC on using TPHC for marinara with the appropriate procedures and records for use in the future. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed multiple TCS items in the walk-in cooler that had been prepped the day prior with no date mark to indicate the day of disposition or preparation. TCS food prepared onsite shall be datemarked with the date of preparation or disposition not exceeding 7 days with the day of preparation counting as day 1. COS: Employee labeled containers of prepped items appropriately. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed tongs used for meatballs stored on top of the container lid of the bain-marie. In-use utensils for TCS foods must be stored in the food with the handle above the food and lid. COS: Tongs removed for cleaning and sanitizing and replaced with larger tongs that will remain in the food. Corrected On-Site. New Violation. 17A Violation of Code: [511-6-1.06(5)(g)3] Trash receptacle in employee restroom did not have a lid. Restroom facilities must have a trash receptacle with a lid in place and in good repair. New Violation. 17B Violation of Code: [511-6-1.06(5)(n)] Observed both doors to the trash receptacle open. Trash receptacle doors and lids must remain shut when not in use to prevent the presence of pests. COS: PIC closed dumpster doors. Corrected On-Site. New Violation.
