Violation of Code: [511-6-1.04(1)] Ice damaged food items were observed in the walk in freezer unit. Walk in freezer observed with heavy accumulation of ice.
511-6-1.04(1) - Safe, unadulterated and Honestly Presented (P)
(1) Condition. Food shall be safe, unadulterated, and honestly presented. P New Violation.
6-1B Violation of Code: [511-6-1.04(6)(f)] Cooked Shrimp was observed hot holding on the buffet steam unit at 107 Degrees Fahrenheit. Shrimp was placed on the steam unit a hour ago.
Shrimp was reheated to 165 Degrees Fahrenheit of 15 seconds within 2 hours during the inspection. Corrected On-Site. New Violation.
8-2B Observed chlorine sanitizer solution in a sanitizer bucket with wiping clothes exceeding the maximum concentration allowed. (More than 200ppm)
Ensure chlorine sanitizer solution is prepared and maintains a concentration of between 50 - 100ppm.
511-6-1.07(6)(g) - Chemical Sanitizers, Criteria (P)
(g) Chemical Sanitizers, Criteria. Chemical sanitizers, including chemical sanitizing solutions generated on-site, and other chemical antimicrobials applied to food-contact surfaces shall:
1. Meet requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert ingredients for use in antimicrobial formulations (Food-contact surface sanitizing solutions) P, or
2. Meet the requirements as specified in 40 CFR 180.2020 Pesticide Chemicals Not Requiring a Tolerance or Exemption from Tolerance-Non-food determinations. P
PIC discarded the solution and prepared a new solution that had a concentration of between 50 - 100ppm during the inspection. Repeat violation. cos. Corrected On-Site. New Violation.
