Violation of Code: [511-6-1.05(3)(h),(i)] Observed the washing temperature gauge on ware-wash machine to not be working. In hot water mechanical ware-washing operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the utensil surface temperature. Repeat Violation.
