Violation of Code: [511-6-1.05(6)(n)] Observed newly made sanitizer buckets and spray bottle registering concentrations of quaternary ammonium less than 100ppm. Quaternary ammonium concentration should be between 200-400ppm. COS: PIC added additional sanitizer bringing all concentrations to 200-400ppm. Corrected On-Site. New Violation. 10D Violation of Code: [511-6-1.04(8)(b)] Observed spinach with an expiration date of 3/8/20 cold holding in the walk in cooler. Time/temperature control safety foods that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS: PIC voluntarily discarded the spinach during the inspection. Corrected On-Site. New Violation. Remarks CFSM Swetaben Patel certificate Exp: 7/7/22. Timothy Marsingill or another manager must become CFSM to ensure food safety is being managed within the food service establishment during all hours of operation. Sanizide wipes available for Norovirus clean-up. Recommend additional disinfectant be available. Refer to the EPA G-list for antimicrobial products effective against the Norovirus.
