Inpection Notes

Violation of Code: [511-6-1.04(6)(f)] Observed diced tomatoes cold holding in the far right 1/3 of a prep top unit at 49 degrees Fahrenheit. Time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: after taking additional temperatures of foods being held in the prep top cooler and an ambient temperature in the far right 1/3, it was determined that this was the only section not holding temperature. Therefore, the tomatoes which were out of temperature were voluntarily discarded during the inspection and new tomatoes with a temperature of 40 degrees Fahrenheit were replaced and cold held in the far left 1/3 of the unit which is holding temperatures. PIC will contact maintenance company to to have prep-top cooler fixed. Until it is fixed, only non-TCS items will only be stored in the far right 1/3 of the unit. Corrected On-Site. New Violation.
