Violation of Code: [511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii)] Observed raw chicken in covered container stored above raw shrimp in covered container in walk-in cooler. Observed raw unpackaged chicken stored above ready to eat packaged spring rolls. Raw animals foods must be stored according to their final cooking temperature. Raw poultry should always be stored below other types of raw animals foods and ready-to-eat foods. COS: PIC moved shrimp to middle shelf and placed chicken on bottom shelf. PIC moved spring rolls above frozen raw chicken. Corrected On-Site. Repeat Violation. 8-2B Violation of Code: [511-6-1.07(6)(e)] Observed spray bottle labeled window cleaner with a clear blue liquid inside. PIC states bottle containers a bleach solution mixed with soap and blue food coloring. No blue food coloring observed during inspection. Soap states - do not mix with bleach or other chlorine products. Chemicals must be used according to the manufacturers instructions. COS: PIC voluntarily discarded blue liquid. PIC was instructed to make a chlorine solution using 1/2 capful of bleach and filling up spray bottle with water. PIC labeled spray bottle - chlorine sanitizer. Spray measured 100ppm chlorine. DO NOT MIX CHEMICALS. Corrected On-Site. New Violation. 12C Violation of Code: [511-6-1.04(4)(m)] Observed employee wiping prep table with a towel soaked in water. Wet wiping cloths must be held in a sanitizer solution between uses. COS: Employee sprayed the table with 100ppm chlorine solution and wiped with wiping cloth. Cloth was placed in linens bin for laundering. Corrected On-Site. New Violation. 14A Violation of Code: [511-6-1.04(4)(k)] Observed containers with no handles being used to scoop sugar and corn starch. In-use utensils must be stored with their handles facing out of the food. COS: PIC replaced both plastic containers with scoops. Corrected On-Site. New Violation.
