Violation of Code: [511-6-1.04(4)(m)] Observed 2 dry wiping cloths being stored on top of glass top freezers. Observed 1 wet wiping cloth being stored on counter next to sink. Wiping cloths for wiping food service equipment must be stored submerged in sanitizer solution at the appropriate concentration. COS: Employee discarded wiping cloths, made a fresh sanitizer bucket with a wiping cloth in it. Sanitizer bucket measured 200ppm QAC sanitizer. Corrected On-Site. New Violation. 15C Violation of Code: [511-6-1.05(7)(a)2,3] Observed reach-in cooler in main kitchen with rusted and paint-peeling racks. Observed both reach-in freezers in main kitchen with rusting interiors and needing cleaning. PIC to clean and paint or replace racks and freezer interiors. New Violation.
