Violation of Code: [511-6-1.04(6)(g)] Observed cooked ribs in bottom of prep-top cooler with a discard date of 6/26/19. Observed chicken breast with no-date label. PIC states chicken had been prepared on 6/25/19. TCS foods that are prepared and held in a food service establishment must be used or discarded after 7 days with the day of preparation counting as day 1. COS: PIC labeled chicken with the made-on date and discarded ribs. Corrected On-Site. New Violation.
