Violation of Code: [511-6-1.05(6)(n)] Chemical-sanitizing dish machine registered a concentration of 10ppm chlorine. Chlorine sanitizer must register at least 50ppm in order to effectively sanitizer food-contact surfaces. COS: PIC to contact technician to service dish machine. Establishment using dish machine to wash and rinse dishes and 3-compartment sink to sanitize. Corrected On-Site. New Violation. 6-2 Violation of Code: [511-6-1.04(6)(g)] Observed house-made Cajun mayo, bleu cheese dressing, beets and other TCS items prepared and held over 7 days. TCS foods prepared in-house must be discarded after 7 days with the day of preparation counting as day one. COS: PIC discarded of items. Corrected On-Site. New Violation
