Violation of Code: [511-6-1.04(4)(c)] Observed raw Chicken drum sticks (Final cooking temperature of 165F) stored above raw ground beef (Final Cooking temperature 155F). To avoid cross contamination, TCS foods should be stored according to final cooking temperature. COS: PIC has designated areas where meats are to be stored in the walk-in cooler. Raw Chicken drum sticks were moved to the raw chicken area. Corrected On-Site. New Violation. 4-1B Violation of Code: [511-6-1.04(8)(a)] Observed 2 dented cans that were stored among the undented cans. A food that is unsafe, adulterated, or not honestly presented shall be discarded or reconditioned according to an approved procedure. COS: PIC discarded dented cans. Corrected On-Site. New Violation.
